The bean mixture can be made, cooled, covered and kept in the fridge for up to 3 days. If you keep it this long, add a further 150ml (5fl oz) of bean liquor. Reheat as per the recipe.

Cook, covered, on the grid shelf on the floor of the roasting oven for 15 minutes. Then uncover for a further 10–15 minutes, turning the sausages to brown.
TIP
If time is short and soaking pulses overnight is not possible, put them in a pan with plenty of cold water to cover, bring to the boil then remove from the heat, cover and leave to stand for 1 hour. Cover with fresh water and press on with the recipe.
